If you live where you can not get a hold of some fresh salsa the next best thing it to make it from scratch.
There are two ways to make this same recipe The cheap and fast way Ingredients and hardware needed A blender or a food processor this recipe makes one bath. you may double it be careful of too much onion if you double it. 1 can of cubed tomatoes (drained) 1/2 of a bunch of fresh cilantro de-stemmed a 1/4 of a med. white onion. 2 cloves of fresh garlic 1/2 of a jalapeno pepper (with the seeds and the vain taken out of the middle this is where the heat is) place all ingredient in either the blender or food processor and pulse until the salsa looks like gazpacho. taste with a restraint style chip. at this point you can add more hot peppers if it isn't hot enough. if it is too hot you can add a 2 inch strip of yellow bell pepper and lime juice to tame the heat if it is too hot. red and green bell peppers will make the salsas bitter and taste funny. Lemons will do the same add salt and pepper to taste.. Once you learn how to make this basic salsa recipe you can play with it and add what you like to it. This is a art and you can find many recipes on line for salsa.. this was our first.. the second way to make this same recipe is with fresh tomatoes. you will need a flame grill or a gass stove and ablender or foodprocessor take your tomatoes Roma preferably and place on the grill cause the skin to turn black. same with the jalapeno peppers and the bell peppers and lightly grill the onions so they are sweet . remove the chard skin of the tomatoes and drain them through a mesh stainer. all of the peppers place in a plastic bag to finish steaming them so the skin will peel off after it is chard. place all of the ingredient in the blender and food processor and blend to desired constituency. add salt and pepper to taste. this recipe does not have vinegar in it so it will break down in about 3days . so when you make it eat it or cook with it what do you do with this kind of salsa? you can marinate chicken in i t, you can marinate a white fish with it or a catfish and deep fry it with white cornmeal but my fav. is to make tex-mex meatloaf Tex-mex Meat Loaf after you make the salsa and let is sit for a few hours in the fridge . mix together 1 1/2 lbs of one of the following: lean ground beef. ground chicken, or ground turkey 2 eggs 1 cup of salsa listed about or your fave fresh restaurant style salsa not out of a jar. 1 cup of whole grain bread crumbs or oatmeal. 2 tablespoons of Worcestershire sauce mix together with the meat and place in a loaf pan or a round baking dish or frying pan and bake 350 for an hour. all of the onions and spices are in the salsa so you don't have to add extra in the meatloaf. this is really easy and taste really good. serve with re fried beans and Mexican rice or grilled veggies from when you were chairing the tomatoes.. and a salad we have this at our house at least 2 times a month .. |
